How do I find out what games are available and how many tables
are active at each online site?

The official and up-to-date version of this answer is
here.
Poker Site Scout is
an independent poker tracking portal showing up-to-the-hour counts
of real money players and games from many of the top online poker
rooms. This is in contrast to the numbers that the sites themselves
advertise, which include play-money and freeroll players. In
addition to the player counts you can see a break down of the types
of games at each site (e.g., holdem, omaha, and stud). There is a
details page for each of the poker rooms covered, and historical
data for peak usage by day over the last few months.
